Hamburger
These
open-faced burgers may not be low in calories, but man,
are they flavorful! And, of course, the addition of Café
Campesino coffee to the recipe makes the dish.

tablespoons vegetable oil
1 large purple onion, peeled and finely minced
2 garlic cloves, peeled and finely minced
1 cup chili sauce
1 tablespoon jalapeno relish
1/2 cup prepared Café Campesino coffee
1 additional tablespoon vegetable oil
1-1/2 lbs lean ground beef
3 hamburger buns, halved and toasted
1 cup grated sharp Cheddar cheese
Heat
2 tablespoons oil in a medium skillet. Sauté onion and
garlic in oil over low heat until soft but not brown. Add
chili sauce and jalapeno relish. Bring to a boil. Lower
heat and simmer 5 minutes. Stir in coffee. Keep on low
heat 5 to 10 minutes but do not boil after adding coffee.
Remove from heat. Keep warm. Heat 1 tablespoon of oil in a
large skillet. Shape meat into 6 thick patties. Brown in
oil over high heat. Turn patties; lower heat. Cook 5 to 10
minutes. Place on toasted buns. Cover with hot sauce and
top with grated cheese. Serve immediately. Makes 6
servings.
Note:
Apologies to the vegetarians out there, but sometimes some
of us just want a big messy burger!
